Nothing quite says goodbye, like loads of sweet treats don’t you think?; its been a busy few weeks for me, hence why have not had a whole lot of time to post. You see I resigned from my job as I got a great offer at a new firm. Its a big step up for me, quite a bit more responsibility and of course a nice raise in salary which should see my over extended wallet breathe a deep sigh of relief!, Sydney prices being what they are.
Chocolate Chocolate Everywhere!
It’s been an age since I have found the time to tell you all what I have been up to, Unfortuantley work has been keeping me crazy busy and I have been working away in this nations fine Capital of Canberra. I would like to tell you that I seen lots of nice sights while I was there for three weeks but sadly it was not to be, the most I saw was the inside of the ACT state office and the inside of my hotel, such is the glamorous lifestyle of travelling away for work.
So to make up for my long absence today and to celebrate Easter - I bring you not one but three delicious chocolate cakes that I have made over the last few weeks. A deliciously rich Chocolate Coffee Cake, Chocolate Orange Layer Cake and a Chocolate Hazelnut Cake.



Gluten Free Lime & Blueberry Cake
As you all know I make cakes for Raymond’s office, for all the birthdays. This time round it was the CEO’s turn, she had requested that the cake be gluten free and sugar free if possible, I also wanted something that would be good for a mid summer birthday. I scoured the Internet and just couldn’t find anything that really took my fancy until I came across this great cake over at The littlest Anchovy which inspired me, I shot Anna a quick note asking her if she thought that the cake would work with gluten free flour, she agreed it would probably be ok; so I gave it a whirl.
My Puppy Totoro
So a while ago I got a new Puppy, I have always wanted a dog since for as long as I can remember but we never really had animals, well accept for a goldfish and a rabbit. So anyway I had been bugging Raymond for ages about getting a dog, more as a joke than anything because I thought it was a bit impractical to have a Puppy in an apartment on his own for 8 hours a day while I was at work. However on a whim we were in the pet store and we saw the cutest little puppy and we just fell in love with him straight away and brought him home that day!
Home Made Lasagne
Ok I have been seriously lax about writing posts recently, you’ll have to forgive me though as I have been crazy busy moving home. As you know not always the easiest thing to do, the thing is when we moved into our old place it was relatively simple, my relationship was fairly new and neither of us had much stuff to bring as I still had not accumulated all that much since moving out to Australia a couple of years before and Raymond moved from his parents. Well things have seriously changed now, I mean I had a least 7 large boxes of kitchen stuff alone.. that would be mainly because I cant seem to go past a homewares shop without buying something for my ever expanding range of gadgets, pots pans and assorted dishes..
Anyhow… onto today’s update, I made this a while ago and decided to blog about it as its the very first time I have made lasagne from scratch including the pasta, and it didn’t turn out too bad at all.
Tangy Orange Sponge
Not really much of a story behind this one, Raymond’s mum asked me to make another Orange cake after tasting my Chocolate Orange Ring, plus when I actually made the other cake I could only find a huge bag of oranges, most of them are still sitting in the fruit bowl.. How long do oranges last anyway? I have had them about 4 weeks and they seem fine. So if you have some left over oranges or if your lucky enough to have a Orange Tree in your yard here is a great light cake which is great with either custard or Ice cream.
