White Chocolate Stars

I recently went shopping for some new bits and bobs for the kitchen in my favorite store (Well second favorite next to Ikea)  and I came across some star cookie cutters on special, and decided to make some treats for Ray..

Shortbread Stars filled with White Chocolate Ganache

The biscuit recipe is not my own, I got it from my usual source you can find it here, it’s pretty basic, however I didn’t have any corn or rice flour so just added some additional plain flour; I did find the mixture was pretty crumbly though, so next time I wouldn’t use quite so much, the resulting dough was fairly easy to use with some extra drops of water added. As you can tell by the picture, I split the dough into parts and used food coloring to change two parts to red and pink! ha-ha, the only colours available in the cupboard…

Cutting the stars out was pretty hard going and it took me a fair while just to make about 10 stars plus the small ones cut out of the middle, once the dough is rolled out it has a tendency to break apart when you try and lift it up, so after a few do-overs finally got them done and cooked in the oven for about 15 mins until lightly golden.

Once cooled I filled with white chocolate ganache, which is basically just melted white chocolate and thickened cream and added some food colouring to contrast. As you can see above they looked pretty good when served with ice cream and prettied up a bit, ok they are camp as a row of tents.. but they tasted great!!!
